Burrata
Burrata is a sack of mozzarella filled with buttery cream. It has recently become a "hot" gourmet item in places like New York City and Beverly Hills. Extremely hard to find because of its very short shelf life, Burrata must be flown in from Italy the day after it is made then quickly sold to consumers and eaten right away. A rare delicacy from Italy's Puglia region, it is wrapped in asfodelo leaves, which indicate the freshness of the cheese! As long as the outer wrapping stays green, the cheese within is still fresh. Serve Burrata like you would Mozzarella di Bufala: paired with fresh tomato, onion, olive oil, cracked black pepper and basil leaves. Cut into Burrata and watch its creamy liquid center ooze all over your plate. Enjoy Burrata with special company; it is a treasure to be shared.

Cabridoux
Cabridoux is a fresh spreadable goat cheese with attractive pyramidal packaging. Made by the experts at Sevre et Belle, you can be sure that a lot of tradition goes into its manufacture. Great as a snack with bread or toast, it is also excellent served with pears or apple slices. Cabridoux is the perfect goat cheese to serve to those who find other chevres too strong.

Cheeses for the Grill Assortment
Whether your preference is for chops, burgers or chicken, the addition of cheese to freshly barbequed meats creates a heavenly marriage. This special assortment includes five favorites for the grill plus a printed sheet of classic and contemporary grilling recipes.

* Cotswold: A harmonious blend of mellow, crumbly cheese and powerful chives and onion bits, Cotswold is a terrific complement to freshly grilled meats. We love it melted over grilled chicken or chops and atop juicy burgers.

* Murcia: A Spanish Queso de Cabra, Murcia is produced in the region of the same name. Its distinctive lemony-peppery flavor and supple satiny body have earned Murcia a place among Spain's elite cheeses, and a regular spot at our barbecue. It's simply wonderful over chicken or pork.

* Paladin Bavarian Blue: This tangy Roquefort-style blue cheese is produced in Bavaria's Alpine countryside. It is an incredibly smooth, flavorful blue cheese which belongs on top of burgers and steaks, or melted into your accompanying mashed potatoes. It's great in salads too.

* Austrian Alps Gruyere: A delicacy originally from the Gruyere district of Switzerland, this cheese is best known as the key ingredient to making fondue. The Austrian version offers all you'd expect in an Alpine Gruyere. It is delightfully nutty and spicy, full flavored and aromatic when melted. It melts easily over burgers, brats and chops.

* Kasseri: In modern Greece, the most traditional sheep cheeses are called Kasseri. Made in large wheels from a careful blend of 75% sheep's and 25% goat's milk, this cheese has the unusual ability to stay solid when heated. Kasseri is often served grilled on skewers, cubed between lamb and oiled-up veggies. It makes a sensational side dish when served hot.

Gaucho Ranch Strip Steaks
After our recent trip to Argentina and Uruguay we are thrilled to introduce these magnificent steaks. Gauchos are the traditional caretakers of the herds that roam the immense South American grasslands. These South American cowboys live in harmony with nature and the ambient environment of the immense plains. The gauchos have a vital love for their lifestyle and a strong respect for the cattle that they tend.

Gaucho Ranch cattle roam freely in the fresh pastures of the South American plains, grazing according to their natural needs. They are never grain-fed or artificially stimulated with the objective of fattening. The free-range environment (each animal enjoys an average of 150,000 sq ft. of natural pastures - 2 soccer fields) also eliminates exposure to unnecessary developmental stresses. These factors help the cattle to develop naturally, resulting in a tender, savory beef that is also low in fat and cholesterol.

Strip steaks are also known as “Bife Angosto.”

Konig Ludwig King's Cheese
An exciting new cheese from Bavaria has made its way to our shores. Called Konigskase (King's Cheese), it is made from milk taken from cows that are exclusively raised on mountain farms in protected regions. In this pristine environment, the cows only feed on fresh grass or hay. The cheesemakers use unpasteurized milk and produce different varieties of hard and semi-hard cheeses using completely natural methods, free from preservatives. Their specialties include King's Cheese, which is moderately aromatic and royally delicious, and King Ludwig's Bierkäse (beer cheese), which is brushed with dark beer during maturation. King's Cheese has a golden yellow appearance and a semi-hard texture. It is perfect for slicing and melting, making it an ideal candidate for sandwiches and fondue.

* Made from unpasteurized cow's milk.
* Photo depicts whole 9 lb. form of cheese.
* We cut and wrap this item by the pound.
* Please contact us if you would like to purchase the whole form.

Le Chevrot Blanc
Le Chevrot Blanc is a fresh tasting goat cheese from the center of France. Bright white in color and creamy in texture, this chevre from Sevre et Belle Fromagerie is only slightly "goaty" and can be enjoyed by all. Essentially a young crottin (button-shaped goat cheese), serve it at the end of a meal or as a midday snack.

* Best eaten within seven days of delivery.

Mascarpone Gorgonzola Torte - Party Size
You have never tasted a cheese like this before. This dairy delight is so creamy and delicious, even people who have sworn off blue cheese love the Mascarpone-Gorgonzola Torte. It is called a torte because it consists of alternating layers of Gorgonzola Dolce and Mascarpone. The texture is, therefore, soft and spreadable and the flavor is utterly addicting. The blue flavor of the Gorgonzola offers a medium tang which is complemented by the creamy smoothness of the Mascarpone. It is the ultimate party cheese - a much more approachable cheese than either Gorgonzola or Mascarpone by themselves.
